How to Cook Ribeye Steaks with Mushroom Sauce

Ingredients

For the Steak:

  • 2 ribeye steaks (about 1 inch thick)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter

For the Mushroom Sauce:

  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Steak

  1. Bring to Room Temperature:
    • Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.
  2. Season:
    • Generously season both sides of the steaks with salt and pepper.

Step 2: Cook the Steak

  1. Heat the Skillet:
    • In a large skillet, heat 2 tablespoons of olive oil or butter over medium-high heat until hot.
  2. Add the Steaks:
    • Place the seasoned steaks in the skillet. Avoid crowding the pan if you’re using multiple steaks.
  3. Sear:
    • Cook for about 4-5 minutes on each side for medium-rare. Adjust the time based on your desired doneness (use a meat thermometer if necessary).
  4. Rest:
    • Once cooked, remove the steaks from the skillet and let them rest on a plate for about 5-10 minutes. This allows the juices to redistribute.

Step 3: Make the Mushroom Sauce

  1. Add Butter and Mushrooms:
    • In the same skillet, add 2 tablespoons of unsalted butter and the sliced mushrooms. Sauté over medium heat for about 5-7 minutes, or until the mushrooms are golden brown and tender.
  2. Add Garlic:
    • Stir in 2 cloves of minced garlic and cook for another minute until aromatic.
  3. Deglaze the Pan:
    • Pour in 1 cup of beef broth and 1 teaspoon of Worcestershire sauce. Scrape up any browned bits from the bottom of the skillet with a wooden spoon.
  4. Simmer:
    • Let the mixture simmer for about 5 minutes, allowing it to reduce slightly.
  5. Add Cream:
    • Stir in 1/2 cup of heavy cream and let the sauce simmer for another 2-3 minutes until it thickens slightly. Season with salt and pepper to taste.

Step 4: Serve

  1. Plate the Dish:
    • Slice the rested steaks and place them on individual plates.
  2. Add Sauce:
    • Generously spoon the mushroom sauce over the sliced steak.
  3. Garnish:
    • Sprinkle freshly chopped parsley on top for a pop of color and flavor.
  4. Enjoy:
    • Serve immediately with your choice of sides, such as mashed potatoes, rice, or vegetables.
