Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (red, yellow, or green), diced
  • 1/4 red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Ingredients

  • Start by gathering all your ingredients. Rinse the chickpeas under cold water in a strainer, and let them drain completely. Chop the vegetables and herbs as specified in the ingredient list.

Step 2: Combine the Base Ingredients

  • In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, diced cucumber, bell pepper, red onion, and kalamata olives.
