Spicy Pumpkin Soup Recipe

Ingredients

  • 1 medium pumpkin (about 2 pounds), peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Optional: pumpkin seeds for topping

Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  2. Add Spices: Sprinkle in the ground cumin, ground coriander, and cayenne pepper. Stir well to combine and cook for 1-2 minutes until fragrant.
  3. Cook the Pumpkin: Add the diced pumpkin to the pot and mix well. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and simmer until the pumpkin is tender, about 20 minutes.
  4. Blend the Soup: Once the pumpkin is cooked, use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
  5. Stir in Coconut Milk: After blending, return the soup to low heat and stir in the coconut milk. Season with salt and pepper to taste. Heat through.
