Ingredients

  • 1 ripe avocado
  • 2 slices of whole grain or sourdough  bread
  • 2 large eggs
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh lemon juice (optional)
  • Olive oil (optional)
  • Fresh herbs (like cilantro or parsley, for garnish)

Instructions

  1. Toast the  Bread: Start by toasting the slices of bread until they are golden brown and crispy.
  2. Prepare the Avocado: While the bread is toasting, scoop the flesh of the avocado into a bowl. Mash it lightly with a fork and season with salt, pepper, and a squeeze of fresh lemon juice if desired.
  3. Cook the Eggs: In a small skillet, heat a little olive oil over medium heat. Crack in the eggs and cook them to your liking—sunny side up, over easy, or scrambled.
  4. Assemble the Toast: Spread the mashed avocado evenly over the toasted slices of bread. Top each slice with a cooked egg.
